Mirepoix in Small Doses
On Mondays I share recipes using a veggie mix called Mirepoix. Click here to read how I make it. I freeze it in 1½ cup flat ziplocks. But, if you're cooking for 1 or 2, you might want to freeze it in smaller chunks.
You can freeze it in an ice-cube tray. After the mixture freezes, pop the cubes into ziplock bags. It will be easy to pull out just the right amount.
While I haven't tried that, I have changed my baggy size.
If you freeze 1-2 cups of Mirepoix in a gallon size bag, and then freeze it flat, you'll be able to easily break it off one frozen chunk at a time.
It will be perfect to add to your scrambled eggs, stir-fry, or even pasta.
