Chicken Noodle Soup

This spring has been full of yucky viruses and weird ole sicknesses.  I have never been so thankful to have a stash of Mirepoix in my freezer.  Even when feeling horrible, making a healthy Chicken Noodle Soup is unbelievably easy.

Get out a big pot (or just use your crock-pot).  Throw in two big chicken breasts (or four small ones) and a bag of Mirepoix.  Add a little salt.  Bring to a boil and then turn it down.  Let it cook until the the chicken falls apart when you touch it with a fork.  I like to take out the chicken and cut it and then throw it back in.  You might want to add water depending on how thick/thin you want your soup.

Now... right before you're ready to eat, throw in your favorite pasta and cook as per the directions for the pasta.

That, my friend, is how you spell Comfort Food.  Here's how you start with your own Mirepoix stash.

My friend made it recently and threw in bigger chunks of celery and carrots after the chicken had cooked.

Or... add a soft cheese (cream cheese or Velveeta) to give it a richer cheesy twist.
