Shepherd's Pie - Mirepoix Style

With Mirepoix in your freezer, this family favorite become a little healthier and a little easier.

Here's the Mirepoix recipe.

Now, throw it in a pan and brown a pound of ground beef.  As you brown them together with a little salt, make your favorite mashed potato recipe.  You'll also need to let some frozen peas thaw.

Layer it with the ground beef on the bottom.  Spread the peas next, and top it with the mashed potatoes.

Pop it in a hot oven to toast the top.  Some people even sprinkle cheese on the potatoes.

This is a great dish to make in bulk and freeze or give away.
